Every colour has a character
Spices come from all over the world, each with their own colour, character and intensity. They do not change a dish. They bring out what was already in there. Our five colours carry their names, set out here from the deepest to the lightest. Start with the one that already feels like you.
Vanilla bean
A pod cured for months before it gives anything away.
The deepest colour we make, and the one SPICES started with. Vanilla is pollinated by hand, flower by flower, then left to cure through a whole season. What you smell at the end is patience. The colour works the same way: quiet, warm, hard to place, and it sits well against every skin tone.

Saffron
Picked by hand from the crocus. Three threads colour an entire pan.
The most precious spice in the world, gathered from the heart of the flower on the few mornings it opens. You need almost none of it to be noticed, and the same is true here. This is the colour for the day you have decided to take up room.

Blue poppy
Seeds measured by the spoon, in a blue between slate and sky.
The calmest colour in the range. It borrows the light of whatever water you are in: grey off the North Sea, clear blue further south. If you want something you never have to think about twice, this is the one.

Chives flower
Everyone knows the stem. Almost no one waits for the flower.
In early summer the chive opens a soft purple head that is entirely edible, and that most people cut away without ever looking at it. A colour for people who notice things. Gentle from across the beach, unexpected up close.

White pepper
The same berry as black pepper, with the skin taken off.
Less loud, not less present. White pepper is the same fruit, soaked and stripped back until only the core is left, and it is sharper for it. The most pared down colour we make, and the one that lets the cut of the suit do the talking.
